The whole family is going to love this dump and bake casserole! All of the ingredients in this Cheesy Chicken Broccoli Rice Casserole bake together in one pan and gets topped with cheddar cheese.

My kids love any sort of cheesy casserole that involves a cream of something soup. And this one is no different!
Not only is it delicious, it's also incredibly easy. Every ingredient (except the cheese) gets tossed together and baked. It all bakes together and then you top it with cheese and bake until the cheese melts!
It's perfect for a busy weeknight or a night you feel too tired to cook - just pop it in the oven as soon as you get home and dinner's done in an hour!

Ingredients
- Cream of mushroom soup - you can use the low fat version of this to make it lower calorie. You can also use cream of chicken if that's what you have on hand.
- Garlic powder, paprika, black pepper
- White rice - uncooked white rice. Brown rice won't work in this recipe because it takes longer to cook and requires more liquid.
- Frozen broccoli - no need to thaw before cooking.
- Chicken breasts - chicken breasts work better than thighs in this recipe because thighs have more fat and you could end up with more of an oily dish. If you don't mind that, you can use thighs.
- Cheddar cheese - a sharp cheese works really well in this casserole because everything else is pretty mild tasting.

How To Make Cheesy Chicken Broccoli Rice Casserole
- Combine. In a large mixing bowl, stir together cream of mushroom soup, water, garlic powder, paprika, black pepper, rice, broccoli, and chicken.
- Transfer. Transfer to a 9x13-inch pan and cover tightly with aluminum foil.
- Bake. Bake at 375F for 50 - 60 minutes.
- Top. Top with shredded cheddar and bake another few minutes, until the cheese is melted.
How Long Is It Good For?
This casserole will be good in the fridge for up to 3 days. Make sure to either cover the pan rightly or transfer the casserole to an airtight container.
You can reheat it in the microwave.

Can You Freeze It?
You can freeze leftovers for up to 3 months. Let it cool completely and then transfer to an airtight container (I like to freeze things in these cubes and then transfer them to freezer ziploc bags) and place in the freezer.
When you are ready to serve it, let it defrost overnight in the fridge and reheat in the microwave.
Can You Make It Ahead?
If you want to prep this casserole the night before, combine everything and transfer to the 9x13-inch pan. Cover it very tightly and store it in the fridge. Bake as instructed.

Ingredients
- 1 (10.5 ounce) can cream of mushroom soup
- 2 cups water
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon black pepper
- 1 cup white rice
- 1 (10 ounce) package frozen broccoli
- 1 pound chicken breasts, cut into bite-size pieces
- 2 cups cheddar cheese, shredded
Instructions
- Preheat oven to 375F.
- In a large mixing bowl, stir together cream of mushroom soup, water, garlic powder, paprika, black pepper, rice, broccoli, and chicken pieces.
- Transfer to a greased 9x13-inch pan.
- Cover tightly with foil and bake in preheated oven for 50 - 60 minutes, until the rice has absorbed the water.
- Top with shredded cheese and bake just until cheese melts, just a couple minutes.

We made this recipe today and the only issue we had was the rice was a tad hard. We even baked it 1 hour and ten minutes. Great flavor though and will make again, but adding more time.
Also, we did add onion which gave it a nice addition.
