Chicken Salad with Grapes and Pecans is the BEST chicken salad you will ever make. It only needs 6 ingredients and is ready in just 10 minutes! It's also a great use of rotisserie chicken.

Chicken salad is one of my favorite foods in the world but I'm very picky about it. I need several different textures, I need a tiny bit of sweetness, and I need green onions.
This is my favorite way to make chicken salad because it has everything I need. Different textured from the chicken, crispy grapes, and crunchy pecans. Sweetness from the grapes. And green onions, of course.
It takes less than 10 minutes to prepare and I almost always have all the ingredients on hand. It's so easy and delicious and works perfectly for an easy lunch or low effort dinner.

Ingredients
- Mayo - you can use lite mayo or even a mixture of half mayo and half plain Greek yogurt if you wanted to lighten up the chicken salad.
- Lemon juice - this adds brightness and just enough acid to cut through the richness of the mayo. The recipe calls for fresh lemon juice but the bottled juice will work as well.
- Salt and pepper - I highly suggest tasting your mayo mixture before adding everything else and seasoning it to your taste.
- Chicken - I like to use a rotisserie chicken for chicken salad. It makes things so easy! Or you can cook your own chicken. I like to use a mixture of white and dark meat.
- Grapes - I like both the look and the sweetness of red grapes in this recipe but if you have green grapes on hand, go ahead and use them.
- Pecans - you could use walnuts instead of pecans if you prefer.
- Green onions - these aren't as sharp as a red or white raw onion so I think it works really well in this recipe.

How To Make Chicken Salad with Grapes and Pecans
- Make dressing. Whisk together mayo and lemon juice. Season to taste with salt and pepper.
- Add remaining ingredients. Stir in chicken, grapes, pecans, and green onions.
- Chill. Cover and chill in refrigerator for 1 hour before serving.
What To Serve With It?
You can make sandwiches, it's really excellent with croissants. You could also do lettuce wraps with a leafy lettuce, wraps with tortillas, or, my favorite way, crackers.

How Long Is It Good For?
Chicken salad is good for up to 3 days in the refrigerator. Make sure to store it in an airtight container.
You can serve it straight out of the fridge.
Can You Freeze It?
You can freeze chicken salad for up to 3 months. I would use something like a freezer ziploc bag and make sure to squeeze as much air out as possible.
When you are ready to serve it, let it defrost overnight in the fridge.
