Egg Roll in a Bowl has everything you love about egg rolls but in a bowl! Ground chicken and coleslaw mix with a savory soy sauce.

This is one of my go to meal prep recipes. It's so simple but really delicious AND low calorie. I'll make it on a Sunday and have lunch done for the first part of the week.
It's basically the filling of an eggroll in a bowl. But it's not deep fried so it's so much better for you than an eggroll!
It takes me less than 20 minutes to make and it all cooks in the same pan. It doesn't really get any easier!

Instructions
- Ground chicken - you could use ground turkey instead if you prefer. If you aren't worried about keeping it low calorie, ground pork would also be delicious.
- Onion
- Garlic
- Ginger - fresh grated ginger will add the most flavor but you can use ground ginger if that's what you have.
- Colelsaw mix - get the kind that has purple cabbage and sliced carrots. It not only adds color to the finished dish but extra nutrition.
- Soy sauce - use low-sodium soy sauce if you have it so that you can control how salty the final dish is.
- Rice vinegar
- Sesame seeds - for serving. I like to use toasted sesame seeds.
- Green onions - for serving. They add a nice brightness to the dish.

How To Make Egg Roll in a Bowl
- Cook chicken. In a large skillet with olive oil, cook chicken and onion until the chicken is cooked through.
- Add aromatics. Add garlic and ginger and cook until fragrant, just 30 seconds.
- Add remaining ingredients. Add coleslaw mix, soy sauce, and rice vinegar.
- Cook. Cover and cook until cabbage has softened significantly, about 5 minutes.
- Serve. Serve with sesame seeds and green onions on top.

How Long Is It Good For?
Egg roll in a bowl is good for up to 3 days. Make sure to store it in an airtight container in the fridge.
You can reheat it in the microwave.
Can You Freeze It?
I don't recommend trying to freeze this recipe.

Ingredients
- 1 teaspoon olive oil
- 1 pound ground chicken
- ½ cup white onion, diced
- 3 cloves garlic, minced
- 2 teaspoons fresh ginger, grated
- 1 (16 ounce) bag coleslaw mix
- 2 tablespoons soy sauce
- 1 teaspoon rice vinegar
- salt and pepper
- sesame seeds, for serving
- green onions, sliced, for serving
Instructions
- Heat olive oil over medium-high heat in a large skillet.
- Add ground chicken and onion. Cook, breaking up the chicken, until the chicken is cooked through and onion has softened.
- Add garlic and ginger and cook until fragrant, just 30 seconds.
- Add coleslaw mix, soy sauce, and rice vinegar. Season to taste with salt and pepper.
- Cover and let cook until cabbage has softened significantly, about 5 minutes.
- Stir to combine.
- Serve with sesame seeds and green onions on top.
