These Apricot Pork Chops are a favorite in my house. My kids ask for them over and over again and since pork chops are an easy and afforable protein option, I'm happy to make them over and over again.
They need only 4 ingredients and take no time to get in the oven. Then they cook in just 25 minutes minutes and in that time, the sauce gets sticky and really coats the pork chops.
And then you'll have extra sauce to drizzle on rice or whatever you choose to serve your pork chops with.

Ingredients
- Boneless skinless pork chops - the thickness of your pork chops will determine how long they cook.
- Catalina dressing - Russian or French dressing also works.
- Apricot preserves - you could substitute peach or nectarine if you have it on hand.
- Dry onion soup mix - this is pretty salty which is why the recipe doesn't call for salt. You can taste your sauce before adding it to the pork to make sure it's seasoned enough for you.

How To Make Apricot Pork Chops
- Prepare. Place pork in a casserole dish.
- Make sauce. Whisk together Catalina dressing, apricot preserves, and onion soup mix.
- Combine ingredients. Pour dressing mixture over pork chops.
- Cook. Bake 20 - 25 minutes.
- Serve. Serve with extra sauce on top.
How Long Are They Good For?
Apricot pork chops will be good for up to 3 days. Make sure to store them in an airtight container in the refigerator.
When you are ready to serve them, the microwave is probably the best way to reheat the pork chops.

Can You Freeze Them?
You can freeze leftover pork chops for up to 3 months. Let them cool completely and then transfer to an airtight container, like a freezer ziploc bag.
When you are ready to serve them, let them defrost overnight in the fridge and reheat in the microwave.

Yes, Apricot Pork Chops are a great crockpot recipe!
Place the pork chops in the slow cooker and pour the sauce on top. Cook on high for 4 hours or low for 6 hours.

- 6 boneless, skinless pork chops
- 8 ounces Catalina dressing
- 1 cup apricot preserves
- 1 (1 ounce) package dry onion soup mix
Instructions
- Preheat oven to 350F. Spray a casserole dish with oil.
- Place pork chops in casserole dish.
- In a small mixing bowl, whisk together dressing, preserves, and soup mix.

- Bake 20 - 25 minutes, until pork reaches an internal temperature of 145F.
