Chicken Cheesesteaks are a quick but flavorful dinner that the whole family will love. Thinly sliced chicken, onion, and bell pepper stuffed in a sub roll and covered in melted provolone cheese. They're ready in less than 30 minutes!

I love a sandwich on a night when I need a really quick and easy dinner. But sometimes a cold sandwich isn't really satisfying. So I love hot sandwiches like these Chicken Cheesesteaks or baked ham and cheese croissants.
These sandwiches have seasoned thinly sliced chicken, onion, and bell pepper inside sub rolls with melted provolone cheese on top. All the different flavors and textures make them so delicious.
If you wanted to make dinner really easy, slice everything the night before and store it in airtight containers in the fridge. That way you just have to throw everything in a pan when you get home from work.

Ingredients
- Chicken - you can use boneless, skinless chicken breasts or thighs for this recipe. You're going to slice them into thin strips before cooking.
- Italian seasoning - this is the main seasoning for the chicken mixture. If you don't have Italian seasoning, any mixture of rosemary, sage, thyme, basil, or oregano.
- Onion - use whatever color only you have.
- Bell peppers - one green and one red. You could just use one color but they really do taste different and the different colors are nice.
- Provolone cheese - you want a sharp, flavorful cheese for these sandwiches. And provolone also melts really nicely.
- Rolls - any sort of soft sub roll will work for these.

How To Make Chicken Cheesesteaks
- Cook chicken. Season chicken with salt and pepper. Cook over medium-high heat until browned and cooked through. Remove to a plate.
- Cook vegetables. Lower heat to medium. Add sliced onion and bell peppers. Cook until very soft.
- Combine. Add chicken to the vegetables and stir to combine.
- Add cheese. Place provolone slices over the chicken mixture and cover until melted.
- Serve. Scoop some of the chicken, veggies, and cheese onto the sub rolls and serve hot.

How Long Is It Good For?
Chicken cheesesteaks are good for up to 3 days. Make sure to store it in an airtight container in the fridge. Don't store the already prepared sandwiches though - keep the bread separeate from the chicken mixture.
When you are ready to serve it, you can reheat in the microwave and serve on the rolls.
Can You Freeze It?
You can freeze the chicken cheesesteak filling for up to 3 months. Let it cool completely and then transfer it to a freezer container, like a ziploc bag.
Let it defrost overnight the day before you plan to serve it. And then you can heat it in the microwave and serve as usual.

Chicken Cheesesteaks

Ingredients
- 2 teaspoons oil, divided
- 1 pound chicken breasts, thinly sliced
- 1 teaspoon Italian seasoning
- salt and pepper
- 1 onion, thinly sliced
- ½ red bell pepper, thinly sliced
- ½ green bell pepper, thinly sliced
- 12 slices provolone cheese
- 6 sub rolls
Instructions
- Heat 1 teaspoon oil over medium-high heat in a large skillet. Season chicken with salt and pepper. Add chicken and Italian seasoning. Cook, stirring frequently, until browned and cooked through, 8 - 10 minutes depending on the thickness of your slicse. Remove chicken to a plate.
- Lower heat to medium and add remaining 1 teaspoon of olive oil to the same pan. Add sliced onion and bell pepper and cook, stirring frequently, until very soft, about 8 minutes.
- Return chicken to pan and toss to combine.
- Lay provolone slices on top of the chicken mixture and cover until melted.
- Scoop into rolls and serve hot.
