Slow Cooker French Onion Pot Roast is a tender beef pot roast that has all the flavors of French onion soup. It's cooked on a thick layer of onions with thyme, worcestershire, and beef broth.

My kids and I have been obsessed with making a pot roast once a week. It's just such a cozy and comforting meal and also so easy to make.
This slow cooker French onion pot roast has all the flavors you love about French onion soup - onions, thyme, worcestershire sauce, and beef broth. The pot roast turns out so flavorful and so tender that it's practically falling apart.
It calls for just 6 ingredients and you can have it in the slow cooker in about 15 minutes.

Ingredients
- Chuck roast - this is the best cut of beef for a pot roast. It becomes so tender when cooked in the slow cooker.
- Onions - thinly sliced. The onions become so soft and delicious after slow cooking all day.
- Garlic - you can use garlic powder if you don't have fresh.
- Dried thyme - if you happen to have fresh thyme on hand, use that instead.
- Worcestershire sauce - this adds a savory deepness to the pot roast.
- Beef broth - this is what really gives it that French onion soup-like flavor.

How To Make French Onion Pot Roast
- Prep. Place thinly sliced onions, garlic, worcestershire sauce, and dried thyme in the bottom of slow cooker.
- Sear. Sear the chuck roast on both sides until nicely browned, about 4 minutes per side.
- Transfer. Place the seared chuck roast on top of the sliced onions. Pour beef broth over it.
- Cook. Cook on low for 6 - 8 hours or high for 3 - 4 hours.
What To Serve With It?
I like to serve mashed potatoes with pot roast so that the potatoes can soak up the juice from the roast. You could also do rice.
Typically I do a pot roast with carrots cooked in the slow cooker with the meat so when I make this one, I do steam some carrots to have on the side.

How Long Is It Good For?
French onion pot roast will be good for up to 3 days after cooking. Make sure to store it in an airtight container in the fridge.
You can reheat it in the microwave.
Can You Freeze It?
You can freeze leftovers for up to 3 months. Let it cool completely and then transfer to an airtight container and place in the freezer.
When you are ready to serve, let it defrost in the fridge overnight and reheat in the microwave.

Ingredients
- 3 yellow onions, thinly sliced
- 2 cloves garlic, minced
- 2 teaspoons Worcestershire sauce
- 2 teaspoons dried thyme
- 2 teaspoons olive oil
- 1 (3 - 4 pound) chuck roast
- salt and pepper
- 1 cup beef broth
Instructions
- Place sliced onions in the bottom of the slow cooker. Add garlic, dried thyme, and worcestershire sauce. Stir. Set aside.
- Heat oil in a skillet over medium-high heat. Season both sides of chuck roast with salt and pepper.
- When oil is hot, add chuck roast and cook until nicely browned, about 4 minutes. Flip and cook on the other side for 4 minutes.
- Transfer the seared chuck roast to the slow cooker and place on top of the onions. Pour the beef broth on top.
- Cook on low for 6 - 8 hours or high for 3 - 4 hours, until roast is so tender it's almost falling apart.
- Serve hot with the extra juices drizzled on top.
