We're almost to pasta salad season! I can't wait for warm days and grilled dinners every night. And pasta is, of course, the perfect side dish for all things grilled.
Mexican street corn pasta salad has all the flavors you love about street corn (or elote) like grilled corn, mayo, chili powder, cotija cheese, cilantro, and lime juice. And then it's tossed with pasta, jalapeno, and green onions to add even more flavor.
It's so easy to make and you can make it ahead if you're hosting a party!

Ingredients
- Corn - you want to use fresh corn on the cob and then either grill it or cook in a drk skiller so that you get those nice browned marks.
- Pasta - you can use any small pasta shape like bowties, penne, shells, or elbows.
- Mayo - you can use a lite mayo if you prefer.
- Lime juice - fresh lime juice is the tastiest but you can use bottled juice if that's what you have.
- Chili powder and paprika - these are the standard spices that come on street corn.
- Jalapeno - adjust the amount of jalapeno based on how much spice you likes.
- Green onions
- Cilantro - you can leave out if you don't like cilantro.
- Cotija cheese - if you can't find cotija cheese, you can use queso fresco or even feta.

How To Make Mexican Street Corn Pasta Salad
- Cook pasta. Cook pasta according to package instructions. Drain and run into cold water. Set aside.
- Cook corn. While pasta cooks, either grill or cook corn in a dry skillet until it's nicely browned on all sides. Let cool until you can handle it and cut the corn kernels off the cob.
- Make dressing. Whisk together mayo, lime juice, chili powder, and paprika. Season to taste with salt and pepper.
- Combine. Once pasta and corn are cool, add them to the bowl with the dressing. Add jalapeno, green onion, cilantro, and cotija cheese. Toss to combine.
- Chill. Chill for 1 hour before serving.

Ingredients
- 1 pound farfalle paste
- 3 ears of corn
- 1 cup mayonnaise
- ¼ cup lime juice
- 1 teaspoon chili powder
- ½ teaspon paprika
- salt and pepper
- 1 jalapeno, minced
- ½ cup green onion, sliced
- ¼ cup cilantro, chopped
Instructions
- Cook pasta according to package instructions. Drain and run under cold water to cool it off. Set aside.
- While pasta cooks, either grill or cook the corn in a dry skillet until browned on each side. Let cool until you can handle it and then cut the corn off the cob.
- In a large mixing bowl, whisk together mayo, lime juice, chili powder, and paprika, Season to taste with salt and pepper.
- Add cooled pasta, corn, jalapeno, green onions, and cilantro the bowl with the dressing. Toss to make sure everything is coated.
- Chill for 1 hour before serving.
- Serve with more cilantro on top.
