Taco Pasta Salad is going to be your favorite summer side dish! Pasta tossed with corn, black beans, tomatoes, green onions, lettuce, and crushed Doritos. It has a delicious dressing made from Catalina dressing and taco seasoning.

My kids are obsessed with that taco salad that has Doritos and Catalina dressing. You know the one. There was a time when I was making that once a week.
So this taco pasta salad is that but in pasta salad form. And I skipped the ground beef because the idea of cold ground beef grosses me out.
It's a chilled pasta salad with corn, black beans, tomatoes, green onions, lettuce, and Doritos. And then it has a dressing made with Catalina dressing and taco seasoning.
It's so delicious and tastes exactly like the salad we all know and love. And it's so easy to make! It will be perfect for all your summer gatherings.

Ingredients
- Pasta - I used rotini (spiral) pasta but you can use any small shape, like penne, elbows, or farfalle.
- Catalina dressing - you can use the lite version if you prefer.
- Taco seasoning - you're going to mix this into the Catalina dressing and chill it while you do the rest of the recipe. You want the taco seasoning to really dissolve into the dressing.
- Cherry tomatoes - cut them in half before beginning.
- Corn - I used canned corn but you can use frozen or even fresh.
- Black beans - make sure to drain and rinse before using.
- Green onions - if you want more of a bite, you could use finely diced red onion in place of the green onions.
- Iceberg lettuce - iceberg is so crunchy that it really holds up in the dressing.
- Doritos - I used nacho cheese Doritos but you could use the cool ranch Doritos, too.

How To Make Taco Pasta Salad
- Cook pasta. Cook pasta according to package instructions. Drain and rinse with cool water. Set aside.
- Make dressing. Whisk together Catalina dressing and taco seasoning. Chill under ready to assemble.
- Assemble. In a large mixing bowl, combine cooled pasta, tomatoes, corn, black beans, green onions, and dressing. Stir until well combined.
- Chill. Chill in refrigerator for 1 hour.
- Finish. Right before serving, stir in iceberg lettuce and crumbled Doritos.
How Long Is It Good For?
This pasta salad will be good for up to 4 days but keep in mind that the lettuce and Doritos will soften the longer that it sits. You can always add more of both though.
Make sure to store it in an airtight container in the fridge. You can serve it straight from the fridge with extra crunchy ingredients added in.

Ingredients
- 3 cups small pasta
- ⅔ cup Catalina dressing
- 1 (1 ounce) package taco seasoning
- 1 cup cherry tomatoes, halved
- ¾ cup canned corn, drained
- ¾ cup black beans, drained and rinsed
- ½ cup green onions, sliced
- 1 ½ cups iceberg lettuce, thinly sliced
- 1 ½ cups nacho cheese Doritos, crumbled
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water. Set aside.
- While pasta cooks, whisk together Catalina dressing and taco seasoning. Chill in refrigerator until ready to assemble.
- When pasta is cool, transfer it to a large mixing bowl. Add tomatoes, corn, black beans, and green onions. Pour Catalina dressing mixture over top and stir to combine.
- Chill in refrigerator for 1 hour.
- Right before serving, stir in iceberg lettuce and crumbled Doritos.
