I grew up eating what we call SOS and if you are military adjacent, you may know what that means. But it’s basically ground meat in a white gravy and it’s served over a piece of toasted white bread. My family has always done a breakfast version with breakfast sausage and hard-boiled eggs but I’ve seen it done with ground beef and peas too.
My kids constantly request breakfast SOS and when I made this Biscuits and Gravy Casserole for the first time, one of them actually shouted “IT’S LIKE SOS BUT WITH BISCUITS ON TOP!”
They loved it, of course. I mean, who’s really going to complain about sausage gravy with buttery biscuits on top anyway?
Breakfast for dinner is one of my favorite ways to make dinner 1) quick and 2) cheap. The ingredient list for this recipe is short and it takes me about 12 minutes to get it into the oven.
Ingredients
- Breakfast sausage – I always go for turkey sausage because it’s typically cheaper than pork and it’s a bit healthier but you can use either.
- Butter – if you use pork sausage, you will need less butter than if you use turkey sausage. So make sure you read that part of the recipe instructions!
- All-purpose flour – this is what is going to make your gravy thick.
- Salt and pepper
- Biscuits – I recommend the classic refrigerated buttermilk biscuits. They’re going to get cut into quarters and arranged on top of the sausage gravy.
How To Make Biscuits and Gravy Casserole
- Cook sausage. Cook sausage over medium-high heat. Remove to a plate, leaving any fat in the skillet.
- Make gravy. Melt butter in the same skillet. Add flour and whisk to combine; cook for a couple minutes. Whisk in milk and let simmer until thickened. Return sausage to skillet.
- Transfer. Pour sausage gravy into a 9×13-inch pan.
- Add biscuits. Cut each biscuit into quarters and arrange on top of the gravy.
- Bake. Bake at 350F for about 25 minutes.
How Long Is It Good For?
Biscuits and Gravy Casserole is good for up to 3 days. Make sure to store it in an airtight container in the refrigerator.
Keep in mind that the biscuits will continue to absorb the gravy the longer it sits so you’ll end up with less gravy and soggy biscuits as the days go on.
You can reheat in the microwave or the oven if you want the crisp the biscuits up again.

Biscuits and Gravy Casserole
Classic sausage gravy baked with refrigerated biscuits on top. Biscuits and Gravy Casserole is an easy breakfast recipe the whole family will love!
Ingredients
- 1 pound breakfast sausage
- 2 - 3 tablespoons butter (if using pork sausage, use 2 tablespoons AND the fat from the sausage. if using turkey sausage, use 3 tablespoons because there shouldn't be any fat.)
- ¼ cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- 3 cups whole milk
- 1 can (8 count) refrigerated biscuits
Instructions
- Preheat oven to 350F. Spray a 9x13-inch pan with oil. Set aside.
- In a large skillet over medium-high heat, cook sausage, breaking it up, until completely cooked through. Use a slotted spoon to remove to a paper-towel lined plate. Leave any fat in the skillet.
- Lower the heat to medium and melt butter to the same skillet (with the fat if using pork sausage). Once melted, whisk in flour, salt, and pepper. Let cook for about 2 minutes.
- Slowly pour in milk, whisking the entire time. Bring to a simmer and let cook until thickened, about 5 minutes.
- Pour sausage gravy into the prepared pan.
- Cut each biscuit into quarters and arrange the quartered biscuits on top of the gravy.
- Bake 25 - 30 minutes until casserole is bubbly and biscuits and a deep golden brown.
