The perfect bowl of soup for a chilly day! Sausage Tortellini Soup is filled with Italian sausage, cheese tortellini, and lots of veggies topped with Parmesan cheese.

Soup season is just the best, isn’t it?
I love a brothy soup filled with lots of stuff this time of year. This Sausage Tortellini is filled with Italian sausage, cheese tortellini, onion, carrots, garlic, and fresh spinach. And then you sprinkle it with Parmesan!
And if you like a spicy soup (like me!), you can use hot Italian sausage and then sprinkle crushed red pepper flakes on top.
It’s so warming and comforting. And it’s ready in 30 minutes or less!
Ingredients
- Olive oil
- Italian sausage – you can use mild or hot Italian sausage depending on your preference
- White onion
- Carrots
- Garlic
- Low-sodium chicken broth
- Cheese tortellini – fresh or frozen. Fresh tortellini cooks in only a couple minutes which makes this a super quick dinner
- Spinach
- Parmesan
- Crushed red pepper flakes – this is optional but if you love spicy soup, it’s a must
Instructions
- Cook meat and vegetables. Heat olive oil over medium-high heat in a large heavy bottomed stock pot. Add Italian sausage (remove casings if necessary), onion, and carrots. Cook, breaking up the meat, until sausage is cooked and vegetables have softened. Add garlic and cook another 30 seconds, until garlic is fragrant.
- Add chicken broth. Stir in chicken broth and raise heat to high.
- Add tortellini. Once chicken broth is boiling, add tortellini. Reduce heat to a simmer and cook according to package instructions. Fresh tortellini will only take 2 – 3 minutes but frozen will take up to 10.
- Add spinach. Once tortellini is cooked, stir in fresh spinach.
- Taste and season. Season to taste with salt and pepper. Depending on the chicken broth you used, you may not need salt at all.
- Serve! Serve hot with Parmesan and crushed red pepper flakes on top.
How Long Is It Good For?
This soup is good for about 3 days in the refrigerator. Make sure to store it in an airtight container – these airtight soup containers are my favorite for storing soup.
Can You Freeze It?
You can freeze this soup for up to 3 months. Make sure to use an airtight container.
When you are ready to serve it, let it defrost in the fridge overnight and then reheat on the stovetop. If the soup has thickened while frozen, you can add more chicken broth or water to get it back to it’s soupy consistency.
