If you are in need of a comfort food dish that you can throw together in minutes, this is it. It takes about 10 minutes of prep and gets baked for 45 minutes and you have the ultimate cozy comfort food.
And did I mention it only called for 5 ingredients?! And it's all really inexpensive ingredients?!
The casserole itself is a creamy chicken mixture and then it gets topped with a boxed stuffing mix. And then you drizzle chicken broth over the stuffing so it gets moistened. It all gets baked together until the casserole is bubbly and delicious and the stuffing is browned and the top is a little bit crunchy.
It's so delicious and it makes the house smell like Thanksgiving which is always a good thing!

Ingredients
- Chicken - boneless skinless chicken breasts work best for this recipe. Chicken thighs would be too fatty and would make the dish runny.
- Salt and pepper - you want to season the chicken even though the rest of the ingredients already have seasoning.
- Cream of chicken soup - you can use the low fat version if you prefer.
- Milk - use dairy milk or nondairy, whatever your preference is.
- Chicken flavored stuffing mix - you could really use any flavor of stuffing mix but since we're using chicken and chicken broth, I went with the chicken flavor.
- Chicken broth - I recommend a low-sodium chicken broth since both the cream of chicken soup and the stuffing mix has a fair amount of salt in them. You could also make your own chicken broth.

How To Make Chicken and Stuffing Casserole
- Make sure. Whisk together cream of chicken soups and milk. Set aside.
- Assemble. Place bite-size chicken pieces in the bottom of a 9x13-inch baking dish. Season with salt and pepper. Spread the soup mixture over the chicken. Sprinkle stuffing mix on top. Drizzle chicken broth over the stuffing mix.
- Bake. Bake, covered, for 30 minutes. Uncover and bake an additional 15 minutes, until casserole is bubbly and stuffing is browned.
- Serve. Serve hot.
How Long Is It Good For?
This casserole will be good for up to 3 days. Make sure to store it in an airtight container in the fridge. Keep in mind that the stuffing will get soggier the longer it sits.
I would reheat it in the microwave.
Can You Make It Ahead?
You can prep this casserole the night before if you need to. I would maybe leave the stuffing off so it doesn't sink into the casserole and get soggy.
Make sure to cover it tightly and store in the refrigerator. It may need a few extra minutes of baking since it's starting from cold.

Can You Freeze It?
You can freeze the casserole unbaked if you want to make dinner even faster. I would use a disposable pan and assemble as the recipe says. Wrap it tightly and it will be good in the freezer for up to 3 months.
When you are ready to serve it, let it defrost overnight in the fridge and bake as instructed. It may need a few extra minutes since it will be cold.

Ingredients
- 1 pound boneless skinless chicken breasts, cut into bite-size chunks
- salt and pepper
- 2 (10.5 ounce) cans cream of chicken soup
- ½ cup milk
- 1 (6 ounce) box chicken flavored stuffing mix
- 1 ½ cups chicken broth
Instructions
- Preheat oven to 375F. Spray a 9x13-inch baking dish with oil.
- In a mixing bowl, whisk together soups and milk. Set aside.
- Place chicken into the prepared baking dish. Sprinkle with salt and pepper and stir to make sure each piece is seasoned. Make sure the chicken is in a single layer.
- Spread the soup mixture over the chicken, making sure all the chicken is covered.
- Sprinkle the stuffing mix over the soup mixture.
- Slowly drizzle the chicken broth over the stuffing, making sure it all gets moistened.
- Cover tightly with aluminum foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes, until casserole is bubbly and stuffing is browned.
- Serve hot.

Tried making this tonight and the stuffing as a topping was terrible for my taste. I originally cooked it exactly as long as the recipe called for, and although the tips of the stuffing were browning, it was very soft all around. I didn’t think that would be pleasant, so I cooked it an extra five minutes at the same temperature and then about 3 minutes on broil. It was a little more crispy when I pulled it out, so I gave it a shot. The bread was basically mush. It was as though I dropped a piece of bread in soup and left it there for 30 minutes then tried to eat the bread. I ended up scraping as much of the stuffing off the casserole as I could (difficult considering how much had disintegrated), and will repurpose the rest of the dish with some rice.

so then, your stuffing is all crusty then? Most people like an original stuffing which is..... soft

I haven't had an issues with stuffing being crusty. The chicken broth gets drizzled over the stuffing before baking to make sure it's moist.
