Crunchy Fritos with a delicious saucy meat mixture and lots of cheese – what’s not to love?!
This is a casserole version of Frito Pie so it’s super easy and quick. It starts with a ground beef, black bean, enchilada sauce mixture and that gets layered with Fritos and cheddar jack cheese. It all bakes until the cheese is melted and the sauce is bubbly and then it’s topped with even more Fritos!
It’s so delicious, ready in about 30 minutes, and a great excuse to eat Fritos for dinner!
Ingredients for Frito Pie Casserole
- Olive oil
- Ground beef
- White onion
- Taco seasoning
- Red enchilada sauce
- Black beans
- Fritos
- Cheddar jack cheese
- Sour cream and green onions
Instructions
- Preheat oven to 350F. Lightly spray a 9×13-inch baking dish with oil. Set aside.
- In a large skillet, heat olive oil oven medium high heat. Add ground beef and onion. Cook, breaking up the meat, until the meat is good through and the onions have softened. Drain if necessary.
- Add taco seasoning and water; stir to combine. Let simmer until most of the liquid is absorbed.
- Stir in enchilada sauce and black beans. Remove from heat.
- In the bottom of the prepared baking dish, spread out about ⅔ of the Fritos. Top with 1 cup of shredded cheddar jack cheese. Spread the taco meat mixture over top, using a rubber spatula to make sure all the Fritos are covered. Top with remaining cheese.
- Bake in preheated oven for 15 minutes, until cheese is melted and casserole is bubbly.
- Sprinkle the rest of the Fritos on top.
- Top with sliced green onions and sour cream before serving.
How Long Is It Good For?
Frito Pie Casserole is good for up to 3 days in an airtight container in the fridge. Keep in mind that the Fritos will get soggier the longer that the casserole sits in the fridge though.
Can You Freeze It?
I don’t recommend freezing this casserole. The Fritos would most likely lose their crunch once frozen and defrosted.
If you wanted to freeze the meat/bean/sauce mixture, you can do that and just add the Fritos and cheese the day you serve it. To do that, let the mixture cool down completely and then transfer it to a freezer ziploc bag.
Squeeze as much air out of the bag as possible and freeze it for up to 3 months!
When you are ready to serve it, let it defrost in the fridge overnight and then assemble the casserole! It may need a few more minutes in the oven since it will be starting out cold. Just keep an eye out for bubbly sauce and melted cheese.

- 1 (1 oz) package taco seasoning
- ⅔ cup water
- 1 (10 ounce) can red enchilada sauce
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (9.25 ounce) bag Fritos
- 2 cups cheddar jack cheese, shredded
- sour cream and green onions, for serving
