Classic Sausage Gravy and Biscuits is perfect for an easy breakfast or breakfast for dinner! Breakfast sausage in a peppery white gravy, served over warm biscuits. It's all ready in about 20 minutes!

We do once a week breakfast for dinner in my house and it may be everyone's favorite night of the week. Breakfast is delicious, of course, but it also tends to be easy and inexpensive.
This sausage gravy recipe calls for just 4 ingredients (plus salt and pepper) and they are all things that I tend to have in my fridge or freezer. And it's all done in about 20 minutes!
If you've never had sausage gravy, it's a white gravy with breakfast sausage and a good amount of black pepper. It's typically served over biscuits but you could also serve it on toast, breakfast potatoes, whatever you want!

Ingredients
- Biscuits - you can use whatever biscuits you like. I like to use the refrigerated ones because they're fast, delicious, and I almost always have them in the fridge.
- Breakfast sausage - use pork or turkey. If using turkey, you will probably have to add fat (either butter or oil) to the skillet to make your roux.
- Flour - this is used to make the roux which ultimately thickens the gravy.
- Milk - I suggest whole milk for a really rich gravy but use what you have. You can use non-dairy as well.
- Salt and pepper - you want to taste your gravy before seasoning because breakfast sausage vary in seasoning so you may not even need to add salt.

How To Make Sausage Gravy and Biscuits
- Prep. Bake biscuits according to package instructions.
- Cook sausage. While biscuits bake, cook sausage over medium-high heat, breaking it up as it cooks.
- Make roux. Add flour to the sausage and cook for a couple minutes, stirring the entire times.
- Add milk. Add milk to the sausage and stir to combine.
- Cook. Simmer for several minutes, until gravy has thickened.
- Serve. Split the biscuits in half and spoon gravy over top.
How Long Is It Good For?
Sausage gravy will be good for up to 3 days in the fridge. Make sure to store it in an airtight container.
When you are ready to serve, reheat in the microwave or on the stove. It will have thickened in the fridge so you will probably need to add a splash of milk while reheating.
Can You Freeze It?
You can freeze leftover sausage gravy for up to 3 months. I would do individual servings in silicone molds so that you can just pull one out of the freezer at a time. Once frozen, you can pop them out of the molds and put them in a freezer ziploc bag.
When you are ready to make them, let them defrost overnight in the fridge and then reheat in the microwave or on the stove. It will likely need some extra milk to get it back to it's original consistency.
Variations
- Add herbs! I kept this recipe really simple but you could add fresh or dried herbs to up the flavor. Both thyme and sage are really delicious in sausage gravy.

Sausage Gravy and Biscuits
Ingredients
- 1 (8 pack) can refrigerated biscuits
- 1 pound breakfast sausage
- ¼ cup all-purpose flour
- 2 cups milk
- salt, to taste
- ½ teaspoon black pepper
Instructions
- Bake biscuits according to package instructions.
- While biscuits bake, heat a large skillet over medium-high heat. Add sausage and cook, breaking it up as it cooks, until no pink remains and the sausage is nicely browned. Do not drain the fat.
- Sprinkle flour over top of the sausage and stir. The fat will soak up the flour and create a roux. Keep stirring for about 2 minutes.
- Pour in milk and stir to combined.
- Bring to a simmer and let cook several minutes, until thickened.
- Season to taste with salt and pepper.
- Split the cooked biscuits in half and spoon the sausage gravy over top.
Notes
If you use turkey sausage, add ¼ cup of fat before adding the flour. Butter or oil will work.
