Tater Tot Breakfast Casserole is an easy and delicious casserole made with tater tots, ham, eggs, and cheese.

This breakfast casserole has been on our weekly meal plan for months now. I've made it for breakfast, lunch, and dinner. It's so delicious, so simple, and so easy to make!
The tater tots are the bottom layer so they soften up and it becomes almost like a hashbrown casserole. And then there's ham, onion, the egg mixture, and lots of cheese on top.
It couldn't be easier to make and would be great for meal prep. Make it on a Sunday and have breakfast or lunch all week long!

Ingredients
- Tater tots - make sure to put them in the fridge to thaw the night before.
- Onion - I use a white onion but use what you have. If you don't like the bite of an onion, you can leave it out or add onion powder to the egg mixture.
- Ham - you want the thick ham steak so you have chunks of ham throughout the casserole.
- Eggs
- Sour cream
- Milk
- Garlic powder
- Mexican blend cheese - you could use cheddar or colby jack instead.

How To Make Tater Tot Breakfast Casserole
- Layer. Arrange tater tots in the bottom of a 9x13-inch casserole. Sprinkle diced onion and ham on top of the tater tots.
- Combine. Whisk together eggs, sour cream, milk, garlic powder, and salt and pepper.
- Pour. Pour the eggs evenly over the tater tots.
- Top. Sprinkle the shredded cheese on top of the eggs.
- Bake. Bake at 350F for 35 - 40 minutes, until eggs are set.
- Serve. Sprinkle green onions on top before serving.
How Long Is It Good For?
Tater tot breakfast casserole is good for up to 3 days when stored in an airtight container in the fridge.
You can reheat it in the microwave when ready to serve.

Can You Freeze It?
You can freeze this casserole for up to 3 months. Make sure to freeze it in airtight freezer-safe containers.
I would freeze individual servings so that you can pull them out one at a time. When you are ready to serve it, let it thaw overnight in the fridge and then reheat in the microwave.
Variations
- You could use any breakfast meat instead of ham, like bacon or sausage. If you use those, they do need to be cooked in advance.

Tater Tot Breakfast Casserole
Ingredients
- 4 cups tater tots, thawed
- ½ cup white onion, diced
- 6 ounces ham steak, diced
- 6 eggs
- ½ cup sour cream
- ½ cup milk
- ¾ teaspoon garlic powder
- salt and pepper
- 1 ½ cups Mexican blend shredded cheese
- green onions
Instructions
- Preheat oven to 350F. Spray a 9x13-inch baking dish with oil.
- Arrange the tater tots in the bottom of the prepared baknig dish, in a single layer.
- Sprinkle diced onion and ham on top of the tater tots. Set aside.
- In a mixing bowl, whisk together eggs, sour cream, milk, garlic powder, and salt and pepper.
- Pour evenly over the tater tots, onion, and ham.
- Top with the shredded cheese.
- Bake in preheated oven 35 - 40 minutes until the eggs are set.
- Sprinkle green onions on top before serving.
