We are less than 2 weeks away from school starting which means I'm already thinking about easy breakfasts I can whip up in the hour or so we have in the mornings.
I love recipes like this that are really simple with just a few ingredients, but I know it's hearty enough that my kids won't be starving by 2nd period.
This one is so easy. It's about 10 minutes of hands on time and then you pop them in the oven for about 15 minutes while you go about your morning.
And did I mention it calls for just 4 ingredients?! Plus salt and pepper but those don't count.

Ingredients
- Eggs - depending on the size of your eggs, you'll need 2 or 3. I use 3 for this recipe and also end up with about a spoonful of eggs left.
- Salt and pepper - this is to season your eggs. Add the amount you would add if you were scrambling eggs for yourself.
- Crescent rolls - the classic refrigerated crescent rolls. You can use any of the varieties.
- Cheddar cheese - you could use a different cheese if you prefer. I think pepperjack would be really nice if you like spice. Colby jack would also be delicious. I would definitely use something with a lot of flavor.
- Breakfast sausage - you want to get the fully cooked links of sausage. If you are using frozen sausage links, microwave them for about a minute just to take the chill off. They will continue to warm in the oven.

How To Make Sausage, Egg, and Cheese Crescents
- Cook eggs. Whisk eggs together with salt and pepper. Scramble over medium-low heat, stopping right before they reach fully doneness. Set aside.
- Prep. Unroll and separate the crescents on a flat surface.
- Assemble. Place ½ a cheese slice on the wide each of each crescent. Add a spoonful of eggs on top of the cheese. Top with a sausage link.
- Roll up. Roll up the crescent rolls starting at the wide end.
- Transfer. Transfer to a parchment-lined baking sheet.
- Bake. Bake at 350F for 12 - 15 minutes, until crescents are golden brown.
How Long Are They Good For?
These crescents will be good for up to 3 days. Store them in the refrigerator in an airtight container.
When you are ready to serve, you can reheat in the microwave, air fryer, or a toaster oven.
Can You Freeze Them?
You can freeze these crescents for up to 2 months. Let them cool completely and then you can put them in an airtight container, such as a freezer ziploc bag.
When you are ready to serve them, let them defrost in the fridge overnight and reheat.

Sausage, Egg, and Cheese Crescents
Sausage, Egg, and Cheese Crescents are a delicious 4 ingredient way to start the day! Breakfast sausage, scrambled eggs, and cheddar cheese rolled up in crescent rolls and baked until the rolls are golden brown.
Ingredients
- 2 - 3 eggs, depending on size
- salt and pepper
- 1 (8 count) package refrigerated crescent rolls
- 4 slices cheddar cheese
- 8 fully cooked breakfast sausage links (if using frozen, microwave for about 1 minute)
Instructions
- Preheat oven to 350F. Line a rimmed baking sheet with parchment paper.
- To a small bowl, add eggs and season to taste with salt and pepper. Whisk until no white remains.
- Scramble the eggs over medium-low heat, stopping just before they are cooked how you like them. (They will cook more in the oven.) Set aside.
- On a flat surface, unroll the crescent rolls and separate into 8 crescents. Place ½ of a each slice on the wider end of each roll. You may have to break apart the cheese to make it fit.
- Divide the eggs among the crescent rolls, placing them on the cheese.
- Place a sausage link on top of the eggs on each crescent roll.
- Roll the crescent rolls up, starting at the wide end.
- Transfer to the prepared baking sheet, leaving a couple inches between each one.
- Bake 12 - 15 minutes, until the crescent rolls are golden brown.
