Sloppy joes are one of my favorite dinners when I need it to be quick quick. Ground meat cooks up so fast and, for the most part, sloppy joe recipes don’t call for much.
These Chicken Parmesan Sloppy Joes take me less than 20 minutes to make from start to finish. It’s as easy as cooking the meat, adding a quick sauce, and toasting the buns!

Ingredients
- Ground chicken – you can use ground turkey if you prefer.
- Onion
- Italian seasoning
- Garlic powder
- Salt and pepper
- Marinara sauce – use your favorite store-bought or homemade marinara sauce.
- Parmesan cheese – grated Parmesan really melts nicely into the sauce. The kind in the green can is perfect for this recipe.
- Buns – I really like the texture of a brioche bun for these sloppy joes. It kind of gives off buttery breadstick vibes and it goes really well with the chicken parmesan flavor. But you can use any kind of burger bun that you like!
- Mozzarella cheese – this is getting melted on top of the sloppy joe mixture so shredded works best. You can lay a slice of fresh mozzarella on top instead.
How To Make Chicken Parmesan Sloppy Joes
- Cook chicken. Cook chicken and onion in a large skillet over medium-high heat.
- Season. Add Italian seasoning, garlic powder, salt, and pepper.
- Add sauce. Add marinara sauce and look cook for about 5 minutes.
- Add Parmesan. Remove from heat and stir in Parmesan cheese.
- Assemble. Toast buns. Place bottom bun on oven-safe dish. Top with sloppy joe mixture and mozzarella cheese.
- Broil. Broil until cheese is melted.
- Finish. Add top bun and serve!
How Long Is It Good For?
The sloppy joe mixture will be good for up 3 days in the fridge. Make sure to store it in an airtight container.
You can reheat it on the stove or in the microwave. If it’s thickened in the fridge, you can add more marinara, chicken broth, or water to get it sloppy again.
Can You Freeze It?
You can freeze the sloppy joe meat mixture by itself for up to 3 months. Let it cool completely, transfer to a freezer ziploc bag (or these freezer cubes that I’m obsessed with), and put in the freezer.
When you are ready to serve them, let the meat defrost overnight in the fridge and then follow the assembly instructions. You may need to add some liquid to the meat mixture to get it sloppy again.
What To Serve With It
I love to serve sloppy joes with a green veggie like roasted broccoli or green beans. A simple side salad would be delicious too.
I have 3 teenage boys so I like to do a heartier side too, like roasted parmesan potatoes or hashbrown casserole.

Chicken Parmesan Sloppy Joes
Ingredients
- 1 teaspoon olive oil
- 1 pound ground chicken
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 ½ cups marinara sauce
- ⅓ cup grated Parmesan cheese
- 6 buns
- 1 ½ cups mozzarella cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground chicken and onion. Cook, breaking up the chicken, until onions are translucent and chicken is cooked through. Drain if necessary.
- Add Italian seasoning, garlic powder, salt, and pepper. Stir to combine.
- Add marinara sauce. Bring to a simmer and let cook for about 5 minutes. You still want it to be saucy but not runny.
- Remove from heat and stir in Parmesan cheese.
- Turn broiler on high.
- Toast buns. Place on oven-safe dish.
- Top bun bottoms with meat mixture. Sprinkle ¼ cup of mozzarella cheese on top of each one.
- Place under broiler and broil until cheese is melted. Watch closely, it will take only a couple minutes.
- Add top bun to each sandwich.
- Serve hot.
