Tater tot casseroles are one thing I know my kids are going to love. I mean, you really can’t go wrong with a cheesy casserole topped with crispy tater tots, right?
This one is taco flavored and the casserole itself is filled with ground beef, corn, black beans, and cheese! And then after you arrange the tater tots on top, you drizzle them with enchilada sauce for extra flavor and then sprinkle lots of cheese on top.
We love this one! I love that I can prep it ahead of time and just bake it when we get home. My kids love it because it’s delicious!
Ingredients
- Enchilada sauce – the sauce adds so much flavor to the overall dish. It gets spread on the bottom of the pan AND drizzled over the tater tots.
- Ground beef – you could use ground turkey or chicken if you want to make it a little lighter.
- Onion
- Garlic
- Taco seasoning – I like to use a low sodium taco seasoning but use whatever kind you prefer.
- Frozen corn – I think frozen corn holds up better in casseroles than the canned corn but in a pinch, the canned corn works. Use what you have!
- Black beans – you could use pinto beans, too.
- Mexican blend cheese – half of the cheese is going into the meat mixture and half is getting sprinkled on top of the tater tots.
How To Make Taco Tater Tot Casserole
- Prep. Spread enchilada sauce in bottom of 9×13-inch casserole dish.
- Make filling. Cook ground beef and onion. Add garlic, taco seasoning, corn, black beans, and water. Simmer until liquid is absorbed. Stir in half of the cheese.
- Transfer. Transfer mixture to the prepared pan.
- Top. Arrange tater tots on top of the filling. Drizzle remaining enchilada sauce over the tater tots and sprinkle with remaining cheese.
- Bake. Bake at 350F for 25 – minutes until filling is bubbly and tater tots are crispy.
What To Serve With It
If your family is like mine, tater tot casserole is a full meal. I usually don’t do a side for this casserole but it would be fun to do chips and guacamole or salsa since it is taco flavor!
How Long Is It Good For?
Taco tater tot casserole is good for up to 3 days. Make sure to store it in the fridge in an airtight container.
I like to reheat this in an oven so I can get some crispness back in the tater tots. But you could also do it in the microwave.
Can You Make It Ahead?
Yes! Make it ahead so all you have to do it come home from work and pop it in the oven.
I would recommend waiting to add the tater tots, drizzle of enchilada sauce, and cheese until right before you put it in the oven but luckily, that only takes a few minutes.
Can You Freeze It?
Yes, I think it’s best to freeze before baking. Make sure it’s wrapped tightly (several times maybe) and it will be fine for up to 3 months.
When you are ready to bake, let it defrost overnight in the fridge and then follow baking instructions. If it’s still slightly frozen, it may need longer in the oven than the recipe states.

Taco Tater Tot Casserole
Change up taco night with Taco Tater Tot Casserole! Cheesy taco flavored ground beef filling with corn and black beans and it's topped with crispy tater tots, enchilada sauce, and more cheese!
Ingredients
- 1 (12 ounce) can enchilada sauce
- 1 teaspoon olive oil
- 1 pound ground beef
- 1 white onion, diced
- 2 cloves garlic, minced
- 1 (1 ounce) packet taco seasoning
- 1 cup frozen corn
- 1 cup black beans, drained and rinsed
- 2 cups shredded Mexican blend cheese, divided
- 1 (16 ounce) bag frozen tater tots
Instructions
- Preheat oven to 350F. Prepare a 9x13-inch casserole dish by spreading ¼ cup of the enchilada sauce in the bottom of the pan.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and onion and cook, breaking up the meat, until beef is cooked through and onion is translucent. Drain if necessary.
- Add garlic and cook until fragrant, just 30 seconds.
- Stir in taco seasoning, frozen corn, back beans, and ¾ cup water.
- Lower heat to medium and simmer until most of the water has been absorbed and mixture is thick.
- Remove from heat and stir in 1 cup of cheese. Set aside.
- Transfer meat mixture to the pan and spread to the edges.
- Arrange tater tots on top.
- Drizzle remaining enchilada sauce over the tater tots and top with remaining cup of cheese.
- Bake in preheated oven for 25 - 30 minutes until filling is bubbly and tater tots are crispy.
